Mobius Bar & Grill opens at Pullman Sydney Airport

Pullman Sydney Airport welcomes Mobius Bar & Grill; a premier dining destination within the first internationally branded 5-star hotel to service Sydney Airport.

Mobius Bar & Grill offers a contemporary dining experience which transitions throughout the day. Upon arriving at the hotel, guests are welcomed with a spacious lobby which blends seamlessly into Mobius Bar & Grill; an open-plan kitchen will allow guests to immerse themselves in theatrics of food preparation.

 

Dining at Mobius, is a true culinary journey transitioning from morning to evening. Begin with breakfast, to a long lunch, drinks and dinner, followed by a nightcap. Headed by Executive Chef, Daniel Simpson, the menu highlights the best of local and regionally grown ingredients on small plates designed to be shared and experience a variety of flavours at the one time.

“Mobius is a celebration of local, artisan producers and their product. We want to share their story and create dishes that respect and complement their beautiful food," he says.

Showcasing Australia’s fresh produce, breakfast includes breads and pastries from Sonoma Bakery, fine cheeses and hot dishes prepared to order, such as 63 degree Highland Fresh free-range eggs, osetra caviar, hollandaise and native greens. Moving into lunch and dinner, those after something casual can find a burger and hot dog menu available for dining or take-away. An all-day breakfast burger and American wagyu beef burger are only some of what the menu has to offer.

Dining, there is a wide selection designed to share including fresh shucked oysters from the NSW South Coast. Mains include rack of lamb, eggplant sambal and crisp chickpeas, and grilled items are cooked right before your eyes on the open grill, including New York striploin pure blood master Kobe wagyu, cut to order. Finish off with something sweet like the orange blossom crème brulee. As a special treat, daily at 5:30pm the chef’s ‘Secret Snack’ is presented to guests in the restaurant and bar, inspired by a New York snack of tater tots, blue cheese and rosemary.

Mobius Bar showcases some of the greatest wines of Australia. The wine list has been curated to show the diversity in the world of Australian winemakers and producers. Local craft beers, bottled and on tap, cider, aperitif and signature cocktails, are featured amongst the wines.
